Understanding Trans Fats

TRANS FATS - Trans fatty acids are man-made fats prevalent in conventional processed foods. During the hydrogenation process, less stable, unsaturated fatty acids are converted into unnatural trans fatty acids, thereby increasing shelf life and improving texture of bakery products.
